Neofavolus alveolaris: The Overlooked, Yet Everywhere, Orange Fungi of Late Spring
In the spring (or as mushroom hunter's call it "morel season") there is a greatly overlooked fungi that would greatly supplement any dish that can handle a fairly bland filler mushroom.
This mushroom is often found widely spread across a single limb of a tree that is dead or dying. It is saprobic meaning it eats dead or decomposing organic material. This one likes the dead pieces of hardwood if finds. Generally, I find it during or after a good rain.
Size: 2-7 cm

When choosing it for the table there are variety of methods to cook it that would be accustomed to any mushroom. Frying, boiling, baking, are options for cooking, but one of the more fun ways is in a soup.
It adds a lively color and will make kids laugh at your orange mushroom soup.
Adding food color to different bowls and letting the kids stir it around will make for a fun treat that also tastes good and light on a cool spring day.
